Mille-Fries: How to Make Crispy Thousand-Layer French Fries

Thought you’d tried every conceivable way to make the perfect French fries? Try this simple step-by-step recipe for 'mille-fries' - the thousand-layer French fries.

This is a completely different way to fry potatoes. It’s like a cross between your regular French fries and mille-feuille pastry, it’s very easy to make and calls for nothing that you won’t have in your pantry.

These easy thousand-layer French fries look more like a dessert than a potato side, so there’s the chance to play with a dessert presentation – serving with a savoury ‘ice-cream’, for example.  For an extra bit of luxury, swap out the vegetable oil in the preparation stage for melted duck fat.

Ingredients

Potatoes -  1 Kg

Black peppercorns – ½ tsp

Chilli powder – ½ tsp

Salt – ½ tsp

Vegetable oil - 2 tbsp + 1 litre for deep frying

Potato flour – 2 tbsp

Method

Step 1

Cut the potatoes, as thinly as possible, with a mandolin.

Step 2

Season with black pepper, chilli powder and the salt.

Step 3

Add the chilli powder and the salt.

Step 4

Add the potato flour and mix with your hands.

Step 5

Line a loaf tin with baking parchment, leaving an overlap piece on each side. Place the potato slices in the tin, layering one on top of the other. Fold the overlap paper over the top of the tin.

Step 6

Bake in the oven at 250 C (446 F) for one hour.

Step 7

Remove from the oven and place a heavy object (like a clean brick covered in tinfoil) on top and allow to rest for 20 minutes.

Step 8

Remove the paper and cut into thick slices. Deep fry in vegetable oil for 15 minutes.

Step 9

Remove, strain and place on kitchen paper, patting gently to remove oil from the surface.
