Having trouble finding the perfect wine to go with your fresh greens? Allow celebrity chef Eric Ripert to guide you into the lovely world of wine and salad pairings.
In this video from his YouTube show Avec Eric, the chef consults wine expert Aldo Sohm to find the perfect match for a salad contaning arugula, string beans, baby carrots, apples and balsamic vinegar, among other things.
Sohm kindly points out the main challenge in pairing salads and wine is the sourness of the vinaigrette. To balance those flavors Sohm recommends fruity whites like Spanish gordello and German riesling.
