Lee explains that the dish he created is dedicated to the American author Jim Harrison - what he describes as gluttony with finesse. Oxtail, escargot, sweet breads and if that wasn’t quite rich enough, a healthy slice of foie gras. The dish is executed simply and with everything cooked perfectly in the pan.
