At the beginning of the week we brought you the news that the famous Noma restaurant in Copenhagen is going to open in Australia for a ten week period in January 2016.
The announcement got lots of attention online as those Down Under started to get excited about the idea of one of the world’s best restaurants opening in the country.
Now, Rene Redzepi has released a video explaining the move and just what attracted him to take his entire Noma team to Australia.
The chef speaks about his first ever visit to the country, the ingredients, wine and coffee and the massive diversity on offer across the Australian landscape.
Redzepi says that one of his biggest Australian experiences was the chance to taste the traditional foods of the aborigine communities and speaks about how he wants to take inspiration from all of the different styles of cooking he expects to encounter while in the country.
