Andoni Luis Aduriz's hyper-creative restaurant Mugaritz will re-open its doors for a 24th season on 1 May, with a new menu built around the idea of 'first times', from which you can see a selection of the dishes below.
The San Sebastian restaurant is known for challenging diners' perceptions, and this year embraces the concept of experiencing things for the first time, with diners being invited to share the challenge and excitement of looking at things through new eyes over a menu of 20 to 22 'bites'.Â
"If the 2020 crisis has taught us anything, it has been the reunion with the first time, the anxiety with which we yearn to return to what we did before. Mugaritz is a living being that regenerates itself every year, keeping its identity alive, but without being the same, offering a new version of itself: every year a new proposal, a new glance,” explains Aduriz.

Mugaritz typically closes for four months each year in order for the research and development team to produce an entirely new selection of themed dishes for the season. Each dish is designed to push both culinary limits and perceptions about food, as demonstrated in these 12 iconic Mugaritz dishes.
As per every year, Mugaritz is inviting five randomly selected people to take part in the dress rehearsal before the official opening night, on 30 April. Check the Mugaritz Instagram account and the platform for details.
