Years ago I fell in love with the simplicity of ice box cakes. It seemed magical that by combining chocolate wafers and whipped cream a cake could develop in the refrigerator overnight.
Its ease of preparation makes this effortless dessert a winner but the problem with ice box cakes are the ingredients. Often times, recipes call for whipped topping made with a slew of artificial ingredients and the pre-made wafers can be hard to find at a regular supermarket.
So what’s the solution? Making a killer ice box cake from scratch, of course! The process is straightforward and doesn’t require any special equipment as you’ll see in this video below. Watch pastry chef Abby Swain from New York City’s Craftbar teach you how to make tasty chocolate wafers to concoct the ultimate ice box cake.
