Potato-leek, creamy tomato, pumpkin...Winter soup season is officially upon us and we could not be more delighted. Indeed, homemade soups are a good way to fill up with fresh vegetables and vitamins that'll keep you healthy all the winter.
So, how about adding a new broccoli soup recipe to your repertoire?
BROCCOLI SOUP RECIPE
To make a broccoli soup recipe for 6 people you will need:
1 kg (2.2 lbs) of broccoli
1.5 liters (1 1/2 quarts) of chicken broth
1 bouquet garni
25 cl (1 cup) of cream
Here's how to make this broccoli soup recipe:
- Start by cleaning the broccoli, shorten the stalks by 5 cm (2 in) and remove the leaves
- Melt the onions over low heat in a knob of butter
- Add the broccoli
- Add chicken broth and bring to a boil
-Add the bouquet garni and let simmer 30 minutes
-Remove the bouquet garni, puree the soup
-Add the cream and season with salt and pepper to taste
