2 acorn, medium, halved and seeds removed
Butter
6 tbsp, divided
Brown sugar
6 tbsp, divided
Nutmeg
1 1/2 tsp ground, divided
Salt
to taste
Pepper

Step 01

- Preheat the oven to 180°C.
- Line a rimmed baking sheet with parchment paper.
- Slice the acorn squash in half with a heavy-duty knife, then scoop out the seeds with your hands.
- Turn the acorn squash halves flesh-side down onto the prepared baking sheet.
- Then place in the pre-heated oven, and bake until the squash begins to soften, approximately 30 to 45 minutes.

- Remove squash from the oven and turn so the flesh is facing upwards.
- Divide butter and brown sugar evenly among the squash halves.
- Sprinkle with a pinch of nutmeg and season to taste with salt and pepper.
Step 03
- Return squash to the oven and bake for another 30 minutes or until the squash is cooked through and soft when pierced with a fork.
