Fava beans
400 g, podded
White wine vinegar
20 ml
Extra virgin olive oil
100 ml
1, crushed
freshly ground
2, sliced
1 tbsp, chopped


To prepare the fava bean salad recipe bring a pan of salted water to the boil, add the fava beans and cook for 4 minutes, until cooked but not soft.

Drain well and put into a bowl.

Combine the oil and vinegar and stir into the warm beans with the crushed garlic. Season to taste with salt and pepper and mix well. Add the scallions and mix thoroughly.

Put into a serving bowl and crumble over the goat's cheese and sprinkle with the mint: the fava bean salad is ready to be served.
