How to make a Salad with Pickled Herring fillets and Beans
For the pickled herrings, put the vinegar, water and sugar into a pan, bring to the boil and leave to cool.
Put the fish, vegetables and spices into a large preserving jar.
Add the cold pickling liquor and seal the jar.
Put in a cool place for at least 3 days.
For the bean salad, wash the frisee and rocket, shake dry and tear into smaller pieces.
Mix with the beans and dress with oil, vinegar, salt, pepper and lemon juice.
Divide the salad between 4 plates.
Take the fish fillets out of the pickling liquor, drain and place on top of the salad.
