Genovese, an Italian-French chef with two Michelin stars to his name, runs the restaurant Il Pagliaccio in Rome, which has just reopened.
We wanted to know what's new at Il Pagliaccio and how the chef is preparing for his stint at the prestigious S.Pellegrino Young Chef 2018 competition.
