Chef Johnny Gu has a very diverse career - from working at Noble House, the Relais & Chateaux Grands Chefs Dinner and now his restaurant at the Le Sun Chine hotel in Shanghai - he has picked up skills from some of the best chefs in the world.
The restaurant serves art inspired food with a strong focus on traditional dishes from Singapore. Dishes such as grandmother pork with brown sauce and braised shrimps with scallions and grey mushrooms are what has made Gu so popular around the world.
Gu was in Italy as judge for the S.Pellegrino Cooking Cup and while visiting the Villa Panna in Tuscany for Acqua Panna Tuscan Days (here you find a video from this year's event), FDL managed to sit down with the chef for an exclusive video interview discussing his work, his philosophy towards food and how he thinks the the fine dining scene is evolving.
