Speakers will be sharing their 'food stories' and speaking on the theme of 'Action and Reaction' at the event on Ireland's rugged West Coast, now in its third year.
Joining them at the rostrum will be Dominique Crenn of Atelier Crenn in San Francisco, Paul Cunningham of Denmark’s Henne Kirkeby Kro, Niki Nakayama of LA’s n/naka, Aquavit’sEmma Bengtsson, Aqua'sSven Elverfeld and many, many more. Writer Kat Kinsman will also be making an apperance.
Staff shortages are hitting the hospitality sector hard, prompting some restaurants to look outside the industry to train those without restaurant experience for life in the kitchen. Andrew Friedman finds out more.
