As part of his web series, On The Table, chef Eric Ripert has sat down with fellow chef and owner of WD50 and Alder in New York, Wylie Dufresne.
The two chefs have different approached to cooking and during the discussion they talk a lot about the differences between traditional and modern gastronomy.

Like past episodes of the series this is a great chat among two chefs who are obviously friends. It's nice to watch two chefs with such a varied approach to cooking discuss their own philosophies in the kitchen.
