Radicchio
1, shredded
Cucumber
1, seeds removed and cut into batons
Radishes
1 bunch, finely sliced
Apple Cider Vinegar
4 tbsp
Olive oil
6 tbsp
Basil
8 leaves, finely chopped
Garlic
1 clove
Sugar
1 pinch, unrefined
Pine Nuts
50 g, toasted

Preparation

  • Mix together the radicchio, radishes and cucumber and place in serving bowls.
  • Place the vinegar, oil, basil, garlic and sugar in a tall narrow beaker and blend to make a smooth dressing.
  • Drizzle the dressing over the salad and scatter over the pine nuts.
