60 g, melted
800 g, the florets
All purpose flour
3 tbsp
200 ml, at least 30% fat
Gruyère cheese
150 g, fresh and grated


  • Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease four ramekins with butter.
  • Blanche the broccoli in boiling salt water for 5 min. Drain but retain the cooking water. Quench the broccoli in cold water and drain well.
  • Melt the butter in a pot and stir in the flour. Quench with 500 ml of the broccoli water. Whisk well to remove the lumps and stir in the cream and the cheese. Season with salt, ground black pepper and nutmeg and simmer on a low heat for 3 min.
  • Place the broccoli in the ramekins and pour the sauce over the top. Mix the breadcrumbs with the melted butter and pour on top. Bake for around 20 min until golden brown. Remove from the oven and serve immediately.
