
Spaghetti With Smoked Salmon and Rocket

Spaghetti Pasta
500 g, whole wheat
Olive oil
60 ml
Leeks
1, sliced
Garlic
2 cloves, crushed
Pine nuts
2 tbsp
Lemon juice

Rocket
1 bunch
Black Olives
100 g, pitted and chopped
Salmon
400 g, cut into strips
Preparation
- Toast the pine nuts in a dry pan and set aside.
- Cook the pasta in plenty of boiling, salted water according to the package instructions until al dente.
- Meanwhile, heat the oil and gently cook the leek for about 5 minutes or until soft. Add the garlic and cook for 2 minutes.
- Drain the pasta and stir in the cooked leeks, lemon juice, rocket, olives, pine nuts and smoked salmon. Season with salt and pepper and serve immediately.
