Wash and chop the strawberries. Place in a small saucepan with the sugar and lemon juice.
Let cook for 5 minutes, mixing gently. Crumble the meringues and place half at the bottom of the jars. Pour a fourth of the strawberry compote in each and top off with the remaining meringue. Add a few mint leaves, close the jars firmly and place in the dishwasher.
