Preparation
Step 01
For the orange scones
- To prepare the orange glazed scones first heat the oven to 220°C (200° fan).
- Grease 2 baking trays.
- Sift the flour, sugar, baking powder and salt into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.
- Gradually stir in the milk, cranberries and orange zest to form a soft dough.
- Turn out onto a lightly floured surface and knead lightly until smooth.
- Roll or pat out 1 cm thick. Cut into rounds with a floured 6 cm cutter. Lightly knead together the trimmings and cut out more rounds
- Place well apart on the baking trays and bake for 12-15 minutes until risen and golden.
- Cool the orange scones on the baking tray for a few minutes, then place on a wire rack to cool completely.
Step 02
For the orange glaze
- To prepare the orange glaze sift the icing sugar into a bowl and gradually beat in the orange juice until thick and smooth.
- Drizzle over the orange glazed scones and leave to set.
