Tonnato is a versatile Italian condiment that can elevate any dish to a whole new level. This creamy sauce is made with tuna, lemon juice, anchovies, capers, soft-boiled eggs and olive oil – all blended together to create a smooth, delicious and salty sauce. You can serve it on chilled vitello tonnato (a summertime Italian dish that calls for finely sliced, cold veal drizzled with tonnato sauce) or spoon it over chicken, roasted or grilled salmon, roasted vegetables, toasts or crusty bread. Let your eggs chill in ice water for 10 minutes. Crack, peel and slice them in half.
Step 03
Scoop only the egg yolks into the bowl of a blender. Add the drained tuna, anchovies, lemon juice, capers and salt and pepper.
Step 04
Turn your blender on low and slowly drizzle the olive oil into the tuna mixture while it’s running. The key is to add the olive oil very slowly, or it will separate from your tuna mixture and won’t emulsify into a smooth and uniform sauce.

Continue to pour olive oil into the blender until half of it has been absorbed.

Serve your tonnato sauce at room temperature or chilled.
