Chef Massimo Bottura of The World's Best Restaurant, Osteria Francescana, in Modena, Italy, has a number of signature dishes that have entered into culinary folklore: Oops! I Dropped the Lemon Tart, for example, the dessert of zabaglione, sorbet and meringue – the result of a fortutious accident on the pass. Another is The Crunchy Part of the Lasagna, a deconstructed lasagna and ode to Bottura's favourite childhood dish (he's an Emilia Romagna native, born in Modena).
In the video below from The New York Times and Yuri Ancarani, we see Bottura and his two assistants prepare the dish, without uttering a word to each other. The only sounds are the sounds of cooking, picked-up by numerous microphones. It's all gloriously hypnotic and when at the end we hear what is presumambly Bottura's voice asking "And how does that make you feel?" the answer is well, hungry, Massimo, but mainly sleepy.
