Check out this great video from the creative team over at Mugaritz. Presented at Madrid Fusion the video shows a new dish intended for the Mugaritz menu when they reopen in April.
It's made by creating a super thin and fragile sugar cone which is then filmed with white foam, toasted grain and a number of different dried flowers collected by the Mugaritz team.
The dish is then finished with chocolate nails which look exactly like the real thing before the cone is stood inside a bed of grains.

Rather than just being faux-meat, Mamu is different. It's a mushroom-based meat alternative that's getting its launch in restaurants so that chefs can test its versatility. Flora Tsapovsky investigates.
