Lime pie with Strawberries and Meringues

250 g, digestive, gluten free, crushed
80 g, melted
Brown sugar
3 tbsp, soft
500 ml, condensed, sweetened
Egg yolks
2 tbsp
Lime juice
120 ml, reshly squeezed
3, halved



    Step 01

    For the pie crust

    • Preheat the oven to 180°C (160° fan) | gas 4.
    • Mix together the crushed biscuits, melted butter, and sugar in a mixing bowl.
    • Pack into the base and sides of a 23 cm | 9" fluted tart tin with the back of a damp tablespoon.
    • Bake the crust for 10 minutes until dry to the touch.
    • Remove from the oven and set aside until needed.

    Step 02

    For the filling

    • Beat together the condensed milk, egg yolks, and cornflour with the lime juice in a large mixing bowl until smooth.
    • Pour into the crust and return to the oven for 15 minutes.
    • Remove to a wire rack to cool.
    • Once cool, cover and chill overnight until set.

    Step 03

    To serve

    • When ready to serve, decorate the top of the tart with meringue kisses and halved strawberries.
