The summer arrives, and with it the desire to prepare homemade ices with the fresh fruit that you might have at home. Preparing lemon popsicles at home is quick and easy, and with just a few ingredients you can get a healthy and fresh treat. Homemade lemon popsicles do not require any special technique, but you will need to choose ingredients of excellent quality, starting with the lemons. The lemons for the lemon popsicles need to be ripe and untreated.

To make lemon popsicles, start by making the syrup with water and sugar. Put the water and sugar in a saucepan and turn on the heat. Mix well. When the mix comes to a boil, cook for 4-5 minutes, stirring constantly. Then cool the syrup obtained.

Wash the lemons well, dry them and press them gently with the palms of your hands. This will make it easier to extract the juice.

Zest the lemon with a microplane or a fine-mesh grater, and set it aside.

Now squeeze the lemon juice. If you prefer, you can filter the juice with a narrow mesh strainer.

Add the syrup to the lemon juice and mix well. Also, add the previously grated lemon zest.

Pour the mixture into the moulds and fix the sticks. Place the moulds in the freezer and let them cool for at least 4 hours, when your lemon popsicles will be ready to serve.


To make your lemon popsicles more Instagrammable, you can add small slices of lemon to the mixture and even a few mint leaves. Using industrial lemon juice is an easier and faster way, but the taste of the lemon popsicles won't be the same. Moulds and sticks are easily available on the main online e-commerce, but a more sustainable choice is to reuse the wooden sticks of ice cream and popsicles. Just wash them in hot water and they will be ready to be used again.


For an even healthier version of lemon popsicles, you can leave out the sugar and prepare them only with water and lemon juice. You can also have fun by adding spices and aromas such as rosemary or basil. Instead of sugar, you can use honey or maple syrup for an even more intense flavour.
