  • Cut off the ends of the pineapple and peel the pineapple.
  • To do this, stand the pineapple on its end and cut off the peel in strips from top to bottom with a sharp knife.
  • Then cut the pineapple into quarters lengthways, remove the hard core and cut the remaining fruit lengthways into slices/wedges.
  • Thread on wooden skewers.
  • Melt the butter and stir in the sugar, lemon juice and spices.
  • Grill the pineapple skewers, brushing with the butter mixture and turning frequently, until evenly browned.
  • Take off the grill, put into a shallow dish and pour the warmed rum over the pineapple skewers.
  • Flambe and serve.
