All purpose flour
400 g, gluten-free piadina flour mix
70 g
200 ml, still water at room temperature
15 g, beer yeast
Bicarbonate of soda
5 h
10 g, fine salt


Start to make your gluten-free piadina recipe by mixing all the ingredients in a bowl with the help of a wooden spoon or electric mixer.

Once the mixture is perfectly smooth, divide it into small balls of about the same size, cover with a clean cloth and leave to rest for 30 minutes.

Knead the individual balls once more and roll them out with the aid of a rolling pin. Cook them for less than one minute each side in a non-stick pan or on the special griddle pan, lightly oiled beforehand.

The gluten-free piadina is ready: just add your favourite filling and enjoy.
