3 cloves, finely chopped

For the pastry

  • Put the flour in a heap on a work surface, mix with the salt and make a well in the middle of the flour.
  • Cut the butter into small pieces and scatter around the well.
  • Break the egg into the middle and chop all the ingredients with a knife until they have the consistency of breadcrumbs.
  • Quickly knead to a dough by hand, form into a ball, wrap in clingfilm and chill for about 30 minutes.
  • Heat the oven to 200°C (180° fan)  gas 6.
  • Grease a 23 cm|9" springform flan tin.

For the filling

  • Mix together the cheese, onion, peas, chives and garlic.
  • Whisk the eggs and stir in the cream.
  • Season with salt and pepper.
  • Roll out the pastry on a floured surface and line the tin.
  • Spread the pea mixture on the pastry, pour the egg and cream mixture over and bake for about 35 minutes until the filling is set. sprinkle with ground pepper.
  • Serve your feta and pea tart warm.
