  • To prepare oat scones recipe first preheat the oven to 190°C (170° fan).
  • Line a large baking tray with greaseproof paper.
  • Combine the flours, baking powder, salt, sugar, and rolled oats in a large mixing bowl, stirring to mix.
  • Whisk together the butter, egg, and buttermilk in a measuring jug.
  • Add to the dry ingredients and mix well to make a moist batter.
  • Add two-thirds of the goji berries and stir well to combine.
  • Place a metal ring mold on the baking tray and spoon the batter into it, pressing down with the back of a wet tablespoon.
  • Repeat until you have 12.
  • Brush the tops of the unbaked oat scones with warmed honey.
  • Bake for about 20 minutes until browned and set.
  • Remove from the oven and leave to cool on the tray before moving to a wire rack.
  • Top the oat scones with the remaining goji berries before serving.
