Lee is a chef with a deep appreciation for tradition and a passion for innovation. Born in Brooklyn to Korean parents, he grew up surrounded by diverse food cultures, which later influenced his eclectic approach to cooking. After working in various New York City kitchens and traveling extensively throughout Europe and Asia, he eventually settled in Louisville, where he gained an appreciation for the richness of Southern ingredients and culinary traditions. Lee’s cooking reflects his journey—merging the Southern foodways of Kentucky with the flavors of his Korean heritage and travels.

His philosophy centers on respecting local ingredients while pushing the boundaries of how to treat them. He is known for elevating Southern staples such as grits, collard greens, and country ham, imbuing them with unexpected flavors like miso, soy, and kimchi. This fusion of cultures creates a dining experience that is both familiar and surprising, rooted in the history of the South while looking outward. In addition to running 610 Magnolia, Lee has expanded his culinary footprint with other ventures, including Succotash Prime and Shia in Washington DC, and Nami Modern Korean Steakhouse in Louisville. Lee is also an acclaimed author, and his book Buttermilk Graffiti won a James Beard Award, confirming his reputation as a chef of real significance.
