

Julien Royer
Royer is the chef/co-owner of French fine dining, three-Michelin-starred restaurant Odette (no.8 on The World's 50 Best Restaurants list 2021) and Claudine, a neighbourhood French restaurant, both in Singapore, as well as one-Michelin-starred Louise, a French bistronomy-style restaurant in Hong Kong.
Born into a family of fourth-generation farmers in Cantal, France, Royer spent much of his childhood foraging and harvesting in his family’s backyards which engendered the lifelong respect for seasonality and terroir that informs his cuisine. His first venture into the kitchen was under the legendary Michel Bras in Laguiole. He then circumnavigated the globe in his culinary career, from London to the French West Indies, before reaching Singapore in 2008.
Royer is dedicated to nurturing the next generation of young chefs and has served as a mentor and judge at the S.Pellegrino Young Chef Competition and is one of the Seven Sages for S.Pellegrino Young Chef Academy Competition 2022-23.
