Quick and Easy Thanksgiving Leftover Casserole Recipe

Thanksgiving food is delicious but figuring out what to do with the leftovers is less than thrilling. Sure, you could always make yourself a sandwich. But how about preparing something a little tastier with just a little more effort?

Here we share a recipe - a method, really - for a Thanksgiving leftover casserole that you can use time and again regardless of which leftovers you have on hand.

Here's how to make a killer Thanksgiving leftover casserole:

  • Butter a 13x9 inch baking dish (a clear one is nice so you can see all the layers).
  • Begin by coating the bottom of the pan with cranberry sauce.
  • Cover with a layer of turkey. It can be sliced, chopped, shredded - whatever you like.
  • Top with a generous layer of leftover mashed potatoes (mashed sweet potatoes work well too).
  • If you have any leftover gravy pour it over the potatoes.
  • Next comes a layer of veggies - use green beans, corn, Brussels sprouts, etc.
  • The final layer should be the stuffing. Cover the entire surface with stuffing then drizzle on leftover turkey broth and/or gravy. This will keep the stuffing moist.
  • Bake at 400 F for 40 minutes or until everything is heated through and reaches an internal temperature of 165F. 

Note: Cover baking dish with foil but remove halfway through. If desired, top with shredded cheese after removing foil.


Of course, this recipe can be modified a number of ways depending on your leftovers. Don't have leftover stuffing? Use leftover bread rolls chopped into cubes. If you don't have leftover turkey broth substitute for chicken broth or stock. You could also make a vegetarian version by leaving out the turkey. Or a gluten-free version by using leftover wild rice (like the casserole pictured above). Just be creative and have fun!
