Preparation

  • Sugar glass could be used to enrich your desserts or as design decorations: to prepare the sugar glass recipe start pouring 120 g and 250 ml of corn syrup into a pot.
  • Stir to mix well.
  • Add the cream of tartar to the pot, put it on the stove and bring the temperature to 160°C .
  • Wait for the sugar to start boiling and then turn off the heat.
  • Pour the boiling sugar onto the sheet of wax paper and let cool completely.
  • Once the sugar has cooled completely, put a heating lamp over the parchment and turn it on.
  • This will make it easier to shape.
  • Roll the sugar into a lump and put it on the nozzle of the hand pump, pumping air into the sugar.
  • It should begin to blow like a bubble.
  • Experiment until you get a shape that you like.
  • Once you have the shape you want, use the fan to cool the sugar glass.
