SAAM

A deep respect for Thai culinary heritage is the foundation of SAAM, yet the expression of that tradition is entirely of the moment. This is not a restaurant that replicates the past; it channels the essential harmonies of Thailand’s signature flavors through modern craftsmanship. Located in San Francisco, the kitchen celebrates the depth and diversity of its native culinary tradition, reimagining it with a fresh perspective that feels both innovative and rooted. The dining concept centers on a family-style offering that encourages a shared meal, focusing on classic Thai curries and meat preparations elevated beyond the everyday. Dishes that have appeared showcase this philosophy, such as a rich beef cheek mussaman curry, slow-cooked for hours with Japanese sweet potato and crispy shallots, or a red curry featuring banana chili stuffed with ground pork and shrimp. The selection is a dynamic reflection of seasonality and careful sourcing, with a clear emphasis on local ingredients, from California white seabass to produce that finds its way into inventive specials. Among the creations that have captured diners’ attention are a distinctive peach somtum and dry khao soi noodles, both of which offer a novel take on familiar Thai profiles. This thoughtful interpretation results in a vibrant and singular addition to the city's already impressive Thai culinary scene. The restaurant brings a new voice to the conversation, one that respects its origins while speaking in a contemporary language.
