The restaurant, which began its life as a celebrated pop-up before establishing a permanent San Francisco home, was born from the simple act of two people sharing the foods of their heritage. This personal history remains the driving force of the kitchen, resulting in a thoughtful and constantly evolving culinary language that explores the harmonies between the two traditions. The result is a style that is at once novel and rooted in personal memory. The exploration of Filipino and Japanese flavors has led to dishes that are both creative and grounded. The kitchen has become known for creations that re-imagine familiar concepts, such as a Sinigang Sara Udon that combines the Philippines’ signature sour broth with the form of a classic Japanese noodle dish. Other offerings have featured Lechon Kawali, its crispness achieved with wok-like pans, and house-made longanisa with Ilocano roots. This philosophy extends to smaller plates, with inspirations ranging from Kushikatsu, the skewered and fried street food of Osaka, to gyoza filled with a savory Japanese-style steak seasoned with the citrus and soy of a Filipino bistek. The plates are dynamic, telling stories of travel, family, and the discovery of shared tastes. From its origins, the project aimed to create a familial, intimate setting, a goal fully realized in its current form. The establishment is built around an eight-seat counter, a format that allows for a direct connection and conversation around the food being prepared. This close proximity to the cooking process underscores the personal nature of the entire endeavor. Seated at the counter, one doesn't just observe the final plating but gets a sense of the thoughtful process that blends distinct culinary perspectives into a cohesive and compelling whole.
