A spicy lobster pasta that arrives flambéed, written for this location, is among the dishes that have defined Bad Roman in Beverly Hills, and it explains the kitchen's temperament quickly. The cooking starts from Italian-American comfort food, the red-sauce repertoire many diners grew up on, then runs it through modern technique with a wink attached. Other plates have built the reputation around it. Penne luongo with black truffle, a spicy gem Caesar, the peekytoe crab luigi and roasted branzino are regularly mentioned, and a roasted garlic babka has become a familiar opener at the table. The shellfish tower draws attention of its own, stacking Maine lobster, oysters, king crab, shrimp, tuna crudo and osetra caviar. Word of mouth has also carried the names of creations kept off the printed list, among them candied ribs and a baked and burnt paccheri amatriciana with guanciale, tomato and pecorino. Beverly Hills is the second Bad Roman. The first opened in 2023 at The Shops at Columbus Circle in New York, and this one, which opened in May 2026, marks the group's West Coast debut. The space on Canon Drive formerly housed The Palm steakhouse, so locals who knew it will find a markedly different tone. The team has said that Italian food is already well loved along North Canon Drive, though much of it leans traditional, which is the gap this kitchen steps into. A burrata figliata made with cheese from The Cheese Store of Beverly Hills belongs to the handful of creations developed for the city. The interior keeps pace with the plates. Velvet banquettes, boar sculptures and snakes winding through 80s inspired decor fill the 3,570 square feet designed by GRT Architects, and a boar named Boris serves as the house mascot. The team describes the setting as the original's high energy in a slightly more intimate space. Cocktails follow the same spirit: the Bad Ombré combines bourbon, lemon and a Barolo float, finished with a Chinato sinker.
