Tomat: The Westchester Restaurant Wasting Less to Make More

Fermentation is only part of that work. The kitchen also dries, cures, and smokes fish and meat. During the tour, I saw a whole tuna carcass hanging from a hook to dry-age, while fish heads and trimmings were dried and smoked for dashi. “We dry-age fish, poultry, and meat,” Dial says. “We also have our own chorizos, salami, ham, and pancetta, so on the charcuterie side of things, we’re curing everything in-house.”

At Tomat’s bar, kitchen byproducts become bitters, infusions, garnishes, and juices. Earlier in the year, Posner says, the restaurant received two entire stalks of locally grown bananas. The flesh went into pastries, and the skins were saved for a housemade banana liqueur. “We don’t even need to think about buying stuff in for the bar,” Posner adds. “We’re just using all the leftovers from the kitchen.”

For Posner, preservation also extends to family life. He describes an Iranian tradition of preparing a jar of pickled garlic when a child is born, which he and Dial have followed for their own children. One jar is roughly three years old; another has been aging for only a few months. “You’re not supposed to touch it for, I think, seven years,” he says. “I’m pretty sure my mom has like 40-year-old black garlic.”

Tomat has made patience a key part of its culinary identity. The menu can change from day to day, responding to whatever is freshest or at its peak, but the pantry moves at a different pace. Some ingredients are ready in weeks; others take months. And some, like the family’s garlic, are measured in years.
