What began as a student venture and a popular farmers' market pop-up has become a permanent Philadelphia destination, built on recipes passed down through generations. The kitchen preserves stories by reinterpreting the dishes of the founder’s upbringing, creating food that feels both personal and rooted in a rich culinary heritage. Some preparations stay close to their origins, while others take on new forms, but each one starts with an understanding of where it came from. The selection gives equal weight to savory and sweet creations. On the savory side, the offerings can include airy Jerusalem-style bagels, known as Kaak Al Quds, and fatayer, pastries filled with ingredients like herbs and cheese or spiced potato. The bakeshop has become known for its chicken sumac buns, which are layered with slow-cooked onions and warm spices. Dips such as hummus, made from hand-peeled chickpeas, and muhammara, a blend of roasted red peppers, are also recurring staples. These items reflect a commitment to traditional flavors and preparations within the context of a modern bakery. The sweet pastries have garnered a significant following.
