The story of Maru San begins not in Washington, but in 1899 with a steamship named Sakura Maru that carried Japanese immigrants to Peru. This journey gave rise to Nikkei, a distinct culinary tradition that evolved as Japanese techniques were adapted to Peruvian ingredients like fiery ají chiles and bright citrus. This restaurant brings that history to the Capitol Hill neighborhood, offering the city’s only dedicated Nikkei hand roll concept. This style is one of adaptation, where Japanese precision meets the bold flavors of Peru—not as a fusion, but as a category of its own with over a century of history. The offerings are centered around hand rolls, built with high-quality fish and served with warm rice wrapped in a sheath of crisp nori. The kitchen has become known for preparations that reflect the Nikkei heritage, such as sweet raw scallops with a parmesan-butter sauce or shrimp with a vibrant huacatay aïoli. Beyond the rolls, a concise list of shareable plates showcases the breadth of this culinary practice, with dishes like wagyu tataki and flounder tiradito making recurring appearances. The sourcing is a point of emphasis, with the kitchen utilizing dry-aged fish of a quality often reserved for more formal tasting counters. The space itself is an intimate, 25-seat counter with an atmosphere shaped by dark wood, black stone, and low lighting. An octopus mural stretches across the ceiling, adding to the transportive quality of the room. This setting accommodates two distinct ways of dining. Most seats are reserved for walk-ins, who can order à la carte by marking their choices on a paper slip.
