For this first step you will need a pairing knife. You will also need a vegetable peeler. Using a pairing knife, slice off the root end and the stem. Now, grab your vegetable peeler and peel the carrot.
For this step you will need to switch to a chef knife. Begin by cutting the carrot into pieces that are about 2 inches long. Square off the carrot by trimming off the sides. Now carefully cut the carrot into long slices being careful to keep your fingers curled under for safety. Then stack two or three slices and cut them into thin strips. Finally, bundle the strips and cut them at a 90 degree angle. Continue the process until you have cut the entire carrot. This will yield small cubes.
