To open an oyster you will need a special knife with a short handle and sharp end. This is called an oyster knife. You will also need a clean kitchen towel to protect you hands.
Begin my wrapping the oyster in a clean kitchen towel. Hold the oyster down and firmly insert the knife between the shells along the hinge. Continue twisting the oyster knife until the shell opens. Then carefully slide the knife along the entire shell to detach the bottom and top shells. Open the shells with your hands and use the oyster knife to detach the muscle. The top shell should be completely free to reveal the beautiful oyster on the bottom shell.
