
An exclusive video lesson to learn how to use knives while preparing chicken: in this video, made with Alma Italian culinary school, we'll learn how to carve a chicken.
For this task you will need to use a carving knife, which is long, thin and perfect for the job. Disposable gloves are optional. Begin by removing the kitchen twine, if used. Then make an incision along the chicken leg. The leg should easily open up to reveal the joint.
Cut right underneath the bone to remove the leg. Repeat on the other side, remembering to spread the leg open and cut underneath the exposed joint. Now turn the chicken over and cut the wings off at the joint.
Then begin slicing the chicken breast by making an incision along the breast bone, following the length of the bone.
Pull the breast open and cut along the back bone. Now, repeat the process on the other side of the breast. Again, glide the knife along the bone to release the breast. Reserve the carcass for another use. Then cut the chicken wings at the joint and reserve the tips for another use. Finish by plating your carved chicken elegantly on a plate.
