Cuisine in Mexico City - Thought from Mesamerica
We started this week on FDL with a report direct from the Mesamerica Food Festival in Mexico City.
The piece was a thoughtful and extensive report on the trends emerging from Latin America right now with ideas from Alex Atala, Carlo Petrini, Enrique Olvera and many more culinary professionals expressed.
The report also included some great videos from a number of chefs across Latin America and the overall piece shows just why so many chefs, Rene Redzepi and Ferran Adria included, think that Latin America really is where it's at.
A Special Regatta
Looking ahead to the S.Pellegrino Cooking Cup and the Acqua Panna Young Chef of The Year Award which take place July 14th and July 15th in Venice FDL decided to bring a profile on the 10 young chefs that will compete in the unique event in Venice which combines sailing and cooking in an adrenaline fueled few days.
This is a profile of ten rising young chefs who will all prepare dishes on board their country's boat before having their dishes and culinary skills judged by a panel of experts including Davide Scabin and Massimo Bottura.
It's a true special event that shows off the beauty of Venice while highlighting a host of rising culinary stars.
A Very Special Dish
Always ready for a trip behind the doors of a great kitchen this week we brought you an exclusive video recipe from Chef Jonnie Boer at the three Michelin starred De Librje restaurant in Holland.
Steak, a selection of wild mushrooms, wild flowers and cauliflower are all combined for this magical dish.
It's a great look at how one of the world's best chefs goes about plating and preparing a dish from scratch.
