Mauro Colagreco, Performing the Taste of Art in Paris

Watch chef Mauro Colagreco performing at Taste Art, Paris: an event merging gastronomy and art to celebrate the 60th Anniversary of Relais&Châteaux association.

Fine Dining Lovers had the exclusive opportunity to join famous chef Mauro Colagreco, from Mirazur Restaurant in Mentone, while preparing for the Taste Art event: a merging between culinary art and contemporary art, hosted at Paris' Palais de Tokyo to celebrate the 60th Anniversary of Relais & Chateaux.

Together with other four talented chefs  - Alexandre Gauthier (La Grenouillère), Sébastien Bras (Bras, Michel et Sébastien), Jean Sulpice (Restaurant Jean Sulpice), Shinichi Sato (Passage 53) - Mauro Colagreco was the artisan and artist of a culinary performance revealing his personality and source of inspiration in front of more than 800 guests.

The artistic display was signed by Jean Blaise (artistic director and organiser of the Nuits Blanches in Paris and the Voyage in Nantes) and Fanny Bouyiagui (founder of Art Point M), an artist who interpreted the universe of each chef:

SATO THE PURE: Echoing the universe of Shinichi Sato means evoking the quest for purity, emotion, gesture, and sensation. Composed of hundreds of round balloons suspended in weightlessness like stars in this wide universe that he owns, this living picture is reminiscent of the very special atmosphere of Passage 53.

GAUTHIER THE FIRE: This extravagant picture has as many visual electro shocks as the cuisine of Alexandre Gauthier (La Grenouillère). By playing with mirrors and reflections, this picture wants primarily to echo the spirit and flamboyance which emerge from the cuisine of Alexandre Gauthier.

SULPICE THE WILD: Inspired by the forest landscapes of Savoy, this picture is playing on seasonality. Because the cuisine of Jean Sulpice (Restaurant Jean Sulpice) is the expression of a profound respect for the region, the seasons, the immutable; this picture interprets the simplicity of things to show that the simplest is often the most surprising, a source for all the discoveries and all the avant-gardes.

COLAGRECO THE COMMITTED: The ability to surprise - whilst being faithful to authenticity and the most essential qualities of the products - is at the heart of the work of Mauro Colagreco (Le Mirazur). This chef also symbolises the commitment of Relais & Châteaux to turn cuisine into the 10th Art, because only art is a bastion against the standardisation and the fake.

BRAS THE DREAMER: Discovering Sébastien Bras means primarily discovering the Aubrac. A homeland “inhabited by silence, saturated by light, nourished by immutable seasons that are tirelessly renewed”. To reflect these peculiarities, this picture is laid out as an oxymoron: a play of light, an excess of LED screens, a mix of photos and images to allow for a more intimate discovery of the power of silence and the strength of authentic gestures.
