Hezret Berdiev is the Young Chef for Russia, Baltics & CIS
Hezret Berdiev, sous-chef at Four Seasons Hotel Lion Palace, St Petersburg, competed against nine other local semi-finalists to take the title with his winning signature dish, simply entitled: Summer in Siberia.
The judging panel and local jury consisted of famous chefs from the region: Vladimir Mukhin, who will also perform the role of mentor to the young chef, Tõnis Sigur, Sergey Shiporov, Liutauras Chepratskas and Uilliam Lamberti.
The jury unanimously gave the victory to the talented young chef for glazed venison with fermented pearl barley with celeriac and pine espume, parsley and pine sponge, and seabuckthorn sauce.
Herzet will now spend the next months perfecting his dish ready to represent the region at S.Pellegrino Young Chef 2016 Grand Finale, which will be held in Milan this October.
