S.Pellegrino Young Chef 2016: Andrea Miacola is the Finalist for Benelux

Andrea Miacola has been announced as the winner of the Benelux semi-final in the S.Pellegrino Young Chef 2016 global talent search to find the best young chef in the world.

Following a days heated competition in De Art in Antwerp, the announcement was made following a unanimous decision from the Benelux local jury, a panel of professional chefs, namely David Martin (Belgium), Filip Claeys (Belgium), Giovanni Bruno (Belgium), Tim Boury (Belgium), Ilario Mosconi (Luxembourg) and Hans van Wolde (The Netherlands).

The Signature Dish

The young Italian chef, who has worked for several years at restaurant De Librije in Zwolle in The Netherlands, managed to convince the jury, above the other nine semi-finalists, with his signature dish of Carmagnola Grey Rabbit in Tom Kha Flavour, Tulips and Vesuvian Tomato Boullion

Reflecting on his dish following the result, the young chef commented: "There is only one ingredient capable of making every dish perfect and unique in its kind: along with the love and passion we demonstrate in its preparation. In my case, take it at face value: the Carmagnola rabbit comes from Piedmont, Italy, the region of which my girlfriend (currently training as a pastry chef) is from.

Chef and judge Hans van Wolde (Beluga, The Netherlands) commented: "It's hard to please everyone when you cook, but the jury was convinced of the winner. The jury in Milan will be amazed at the signature dish. It is a modern recipe with a classical base, which has everything to amaze and win."

The Grand Final

David Martin (Peace, Belgium), who will also become Miacola's mentor said: "The level was very high in this regional final. The jury, however, chose the winner unanimously. I am very proud to support Andrea during the World Finals in Milan in October."

Miacola will now have time to hone and perfect his dish under the guidance of French chef Martin before the ultimate challenge arrives later in the year at the grand final in Milan. It is here that Miacola will cook his signature dish live in front of a judging panel of seven top international chefs: Gaggan Anand, Elena Arzak, Mauro Colagreco, Carlo Cracco, Wylie Dufresne, David Higgs and Roberta Sudbrack, who will select the best young chef in the world from all 20 international regional finalists.
