1. Combine all the ingredients apart from the coriander in a slow cooker.
2. Cover the cooked with a lid and cook on low for 6 hours, stirring from time to time.
3. Stir in the coriander and adjust the seasoning to taste.
4. Spoon into a large jar, leave to cool, and seal well. Chill before serving.
