Barbecued Vegetable Skewers with Pita Bread

These vegetarian and vegan friendly skewers stacked with flavour and colour are a welcome addition to BBQ time!

Preparation

Method:

1 Soak 4 wooden skewers in water for 30 minutes (this stops them burning).

2 Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.

3 Mix together the honey, mustard, oil, salt and pepper.

4 Thread the vegetables onto the skewers and brush with the honey mixture.

5 Place on the baking trays and cook for 25-30 minutes, until the vegetables are tender.

6 Put into serving bowls with a mini pita bread.
