ingredients

Ciabatta loaves
2
Butter
5 oz (140g), softened
Garlic cloves
4-6, crushed
Parsley
A handful, chopped
Parmesan cheese
2 tbsp (14g), finely grated

Method

Step 01

Cut the bread in half lengthwise. Crisp up the crust side for 2 minutes.

Step 02

Combine butter, garlic and parsley in a bowl. Spread this mixture over the halved bread. Sprinkle with Parmesan cheese.

Step 03

Just before serving, place the bread on a baking tray, then grill under high heat for 5 minutes until it turns crispy and lightly golden. Allow it to cool for one minute before slicing it into thick pieces.

Tips

Any crusty bread works well for garlic bread. Ciabatta and baguette are excellent options, as they can be sliced horizontally, offering a soft side for the garlic butter.

Sprinkle with grated parmesan, grated mozzarella, or crumbled goat's cheese once the butter has been spread.

Add a spoonful of pesto to your garlic butter.

Add some garlic powder to the mix to make it even more garlicky.

Add one tablespoon of sun-dried tomato pesto to the garlic butter for an umami boost.
