A nice crispy Japanese tempura recipe with vegetables such as eggplants, carrots, asparagus

Preparation

Heat the oil in a wok or deep skillet until smoking.

Sift the flour and baking powder into a bowl and fold in the egg white. Add enough water to make a thin batter.

Cook the vegetables in batches by coating in batter then deep frying in the oil until crisp.

Drain on kitchen paper and serve immediately.
