Chicken
4 thighs, skinned and deboned
Chilli
1 red, finely sliced
Ginger
1 tbsp, fresh, finely sliced
Garlic
2 cloves, finely sliced
fish sauce
2 tbsp, or huoc nam
sugar
1 - 2 tsp
lime
1, juiced
Lemon
leaves

Preparation

  • To prepare the spicy grilled chicken thighs marinated in lemon first prepare the lemon marinade.
  • Mix together the chilli, ginger, garlic, huoc nam and sugar with some lime juice and taste - you need a balance of hot, sharp and sweet.
  • Toss the chicken in the marinade and refrigerate for 1 hour.
  • Wrap the chicken in the leaves. Heat a griddle pan until hot.
  • Griddle the parcels over the heat until charred and the chicken is cooked through.
  • You can reduce any remaining marinade in a small saucepan to serve as a dipping sauce for the spicy grilled chicken.
  • Add sliced lime tucked under the chicken for extra freshness.
